Tomato chutney
What you need:
500g or 5 large tomatoes, chopped
1 onion, finely chopped
1-2 red chili peppers, or, yellow Madame Jeanette chili peppers, finely chopped
3 tbsp sugar
3 cloves of garlic, finely chopped
2 tbsp massala curry powder
2 tsp salt
2 tbsp sunflower oil
Heat the oil in a wok and sauté the onion, garlic, chili pepper. Add the massala curry powder and fry another 30 secs.
Add tomatoes, salt and sugar and bring to the boil, stirring occasionally. Cover the pan and let simmer for approx. 30 mins. Remove the lid and cook at high heat for approx 5 mins. to reduce the liquid. Serve cooled with bara.
